This delicious and nutritious breakfast (or in my case lunch) will leave you feeling healthy, energized, and motivated to keep up the health kick through the rest of the day. Use a small omelet sized pan to maintain control of your portion size. One thing you'll learn about me is that I don't use measurements when I cook. I'm always experimenting, which leaves little room for rules in my eyes.
Ingredients: Mushrooms, Onions, Spinach, Avocado, Brie cheese, Egg Beaters(or any type of egg you'd prefer), Olive Oil.
Preparation (15 min): heat a small pan to medium heat and add olive oil. Add spinach, mushrooms, and chopped onion to the pan and sautee until the onions are translucent and a little brown. turn down heat a few notches. pour in eggs(2 eggs if using regular eggs) and scramble until it reaches the consistency you prefer. On your plate, have a few slices of brie prepared. Also, cut up 1/2 of an avocado into small pieces and disperse it on the bottom of the plate to serve as the bed of the scramble. Once, the eggs are done, Add the eggs on top of the avocado and top with slices of brie. Simple as that!
To add to that energized feeling this meal will give you, accompany it with a cup of coffee or if you're feeling a little lazy grab a venti unsweetened green tea from starbucks for some natural herbal energy!
